Depends on the engine.

CVH has a sender mounted in the block to right hand side of the exhuast manifold. This operates the dash reading. Also has a thermoswitch in the water thermostat housing which operate the fan.

Zetec had a sensor again in the thermostat housing and also one in the top coolent hose to the right of the engine bay. think the hose one is again for the fans and the other is ecu and dash reading.

Zetec engines have two temp sensors. They are both mounted to the thermostat housing. The sensor on the top is for the ECU and the difficult one to get at underneath is the sender for the temp gauge on the dash. They have different types of plugs so can't be confused.

Must be some variance between models as my Gti has just one which operates the dash and ecu. When it started to fail it messed with the fueling and dash gauge was going back forth from hot to cold.
